Reading the bag
Fresh is a window, not a day
Light roasts release a lot of carbon dioxide in the first days after roasting, and brewing them too early gives a sharp, hollow cup. These are the windows we brew in at the bar.

Days of rest for filter
Open the bag after about a week for the sweetest pour-over.

Days of rest for espresso
Espresso needs a little longer before the shots run evenly.

Orders placed by Monday at 12:00 are roasted and posted on Tuesday; orders by Thursday at 12:00 go out on Friday. Parcels reach most of Finland in one to three working days, or collect your bag from the café.
